The filling is bound with egg and enriched with shredded cheddar cheese, creating a rich, flavorful texture. Topped with black olives and green chiles, it offers a nice kick of heat.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175°C).
  2. Cook bacon in a large skillet over medium heat until crispy. Remove bacon, drain on paper towels, and crumble. Reserve 1 tablespoon of bacon grease in the skillet.
  3. In the same skillet, add ground beef, onions, and green bell peppers. Cook, breaking up the meat, until browned and onions are tender. Drain excess fat if necessary.
  4. Stir in cornmeal, oregano, chili powder, salt, black pepper, dry mustard, and Worcestershire sauce. Cook for 1 minute to toast the spices.
  5. In a mixing bowl, whisk together egg and milk.
  6. Add tomato sauce, corn, half of the shredded cheddar cheese, crumbled bacon, and the egg mixture to the skillet with the meat. Stir well to combine.
  7. Pour the mixture into a greased 8-inch square baking dish or pie plate.
  8. Top with remaining cheddar cheese, sliced black olives, and chopped green chiles.
  9. Bake for 30 to 35 minutes, or until the center is set and the top is golden brown.
  10. Let cool for 5 minutes before slicing and serving.
