Directions
-
Rinse the dried ancho chilies and place them in a small bowl; cover with hot water and let soak for 15 minutes until softened.
-
Pat the chicken thighs dry with paper towels and season lightly with salt.
-
In a large Dutch oven or heavy pot, heat a drizzle of oil over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden brown, then flip and sear for another 3 minutes. Remove chicken and set aside.
-
Reduce heat to medium. Add the chopped celery and pierced onion to the pot; saut for 5 minutes until the celery begins to soften.
-
Add the pierced garlic head, potato chunks, winter squash, and soaked ancho chilies (drained) to the pot.
-
Pour in 14 cups of water and add the black peppercorns and salt. Bring the mixture to a boil.
-
Return the seared chicken to the pot, submerging it partially in the liquid. Add the halved tomatoes.
-
Reduce heat to low, cover, and simmer for 30 minutes.
-
Add the cabbage pieces and corn kernels to the pot. Continue to simmer covered for another 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
-
Remove the onion and garlic head from the pot. Squeeze the roasted garlic cloves out of their skins into the stew, discarding the skins. Remove the onion, chop it roughly, and return it to the pot (or discard if preferred). Discard the softened chilies.
-
Taste the broth and adjust seasoning with additional salt or pepper if needed. Serve hot.
