Description

This classic American comfort dish transforms humble SPAM into a luxurious, creamy main course. By sauting green peppers and mushrooms in butter, then whisking in a rich roux-based sauce with half-and-half, you create a velvety, savory gravy that coats tender cubes of luncheon meat. The addition of pimiento adds a subtle sweetness and vibrant color, balancing the saltiness of the SPAM. Its a quick, satisfying meal perfect for busy weeknights or potlucks. Traditionally served over crispy puff pastry shells for a delightful textural contrast, it also pairs wonderfully with fluffy rice or toasted bread to soak up every drop of the delicious sauce.

Ingredients

Directions

  1. In a large saucepan, melt the butter or margarine over medium heat.
  2. Add the chopped green bell pepper and saut until tender, about 3 to 5 minutes.
  3. Sprinkle the flour over the cooked peppers, along with the salt and coarsely ground pepper.
  4. Stir continuously to blend the flour into the butter and vegetables, cooking for 1 minute to remove the raw flour taste.
  5. Gradually stir in the water, half-and-half, and the crumbled chicken bouillon cube.
  6. Cook over low heat, stirring constantly, until the bouillon is completely dissolved and the mixture comes to a boil and thickens into a smooth sauce.
  7. Add the cubed SPAM, sliced mushrooms, and chopped pimiento to the sauce.
  8. Cook and stir for 3 minutes, or until the ingredients are heated through.
  9. Serve the hot SPAM A La King mixture over puff pastry shells, rice, or toast.

Note

If you do not have puff pastry shells, this dish is also delicious served over hot buttered noodles, mashed potatoes, or toasted English muffins.

You can substitute the chicken bouillon cube with 1 teaspoon of chicken bouillon granules or 1/2 teaspoon of chicken base for a deeper flavor.

For a variation, try adding a pinch of paprika or a dash of hot sauce to the sauce for a bit of extra kick.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of milk if the sauce has thickened too much.
