Directions
-
Peel, core, and coarsely chop the apples.
-
Place chopped apples in a large saucepan with 1/4 cup sugar and 1/4 cup water. Cook over low heat for about 15 minutes, or until the apples are very soft.
-
Meanwhile, in a separate saucepan, combine the remaining 3/4 cup sugar, 3 tablespoons water, cinnamon, nutmeg, and cloves. Heat over medium heat, stirring constantly.
-
Continue stirring as the sugar dissolves and caramelizes. Once it turns a very dark brown, immediately pour it into a 2-quart flan mold.
-
Quickly turn and tilt the mold to coat all interior surfaces with the hot caramel. Set aside to cool and harden.
-
Scald the heavy cream by bringing it to a quick boil, then immediately remove from heat and set aside to cool slightly.
-
Preheat the oven to 350&# 194;°F (175ðC).
-
Transfer the cooked apples to a blender or food processor and puree until completely smooth.
-
In a large bowl, beat the eggs. Slowly pour in the scalded cream while stirring constantly to temper the eggs.
-
Strain the egg and cream mixture into another large bowl to ensure smoothness.
-
Fold the pureed apples into the egg mixture, mixing well until fully incorporated.
-
Pour the apple custard mixture into the caramel-coated mold.
-
Place the mold in a large baking pan. Fill the pan with room-temperature water until it reaches halfway up the sides of the mold.
-
Bake for about 1 hour 30 minutes, or until a knife inserted into the center of the flan comes out clean.
-
Remove from the oven and let cool to room temperature.
-
To serve, briefly dip the bottom of the mold into warm water to loosen the caramel glaze. Invert onto a serving platter.
