Description

This elegant chilled salad combines sweet honeydew melon with tender white crabmeat in a rich, creamy dressing. The dressing is a unique blend of whipped cream and mayonnaise, brightened with lemon juice and seasoned with paprika, hot pepper sauce, and Worcestershire sauce for a complex, savory-sweet flavor profile. Served over bitter radicchio leaves, the dish offers a delightful contrast in textures and temperatures. It is an sophisticated appetizer or light lunch perfect for summer gatherings, garden parties, or as a refreshing starter before a main course. The subtle heat from the spices complements the natural sweetness of the fruit, creating a balanced and memorable bite.

Ingredients

Directions

  1. Cut the honeydew melon in half and remove the seeds. Use a melon baller to scoop out the flesh into uniform balls.
  2. In a large mixing bowl, whip 1 1/2 cups of whipping cream until soft peaks form.
  3. To the whipped cream, add 1 1/2 cups of mayonnaise, 2 teaspoons of lemon juice, 1 teaspoon of paprika, 1/2 teaspoon of hot pepper sauce, 1/2 teaspoon of Worcestershire sauce, and 2 tablespoons of tomato paste. Mix thoroughly until the dressing is smooth and well combined.
  4. Gently fold 8 ounces of flaked white crabmeat into the dressing, ensuring the crab is evenly coated.
  5. Lightly mix the melon balls into the crab and dressing mixture. Toss gently to avoid breaking up the melon or crab.
  6. Arrange radicchio leaves on 4 individual serving dishes to create a bed for the salad.
  7. Spoon the melon and crab mixture over the radicchio leaves.
  8. Cover and chill the dishes lightly in the refrigerator for 10-15 minutes before serving.
  9. Garnish with lemon and lime slices and fresh mint sprigs if desired. Serve immediately.

Note

Use fresh, high-quality white crabmeat for the best flavor and texture. Ensure the crab is fully thawed and drained if using frozen crab.

The dressing can be made ahead of time and stored in the refrigerator for up to 24 hours. Whip the cream again before mixing if it becomes too soft.

For a lighter version, substitute half-and-half or light whipped topping for the whipping cream, though the texture will be less rich.

Radicchio provides a bitter contrast that balances the sweetness of the melon and richness of the dressing. If unavailable, endive or mixed greens can be used.

Adjust the amount of hot pepper sauce and paprika to suit your preferred level of spiciness.

This dish is best served cold. Do not leave at room temperature for extended periods due to the dairy and seafood ingredients.
