  1. Wash the oranges thoroughly and slice them very thinly, including the peel.
  2. Place the sliced oranges in a large preserving kettle or heavy-bottomed pot.
  3. Add enough water to cover the oranges by about 1/4 inch (approximately 5 cups total).
  4. Tie the cinnamon sticks, allspice, and cloves in a cheesecloth bag.
  5. Add the spice bag to the kettle with the oranges and water.
  6. Bring the mixture to a boil over high heat.
  7. Reduce the heat slightly and continue boiling until the oranges are very tender, stirring occasionally.
  8. Remove and discard the spice bag.
  9. Add the pitted cherries, fresh lemon juice, and sugar to the kettle.
  10. Stir continuously until the sugar is completely dissolved.
  11. Return the mixture to a rolling boil.
  12. Boil rapidly, stirring frequently to prevent scorching, until the mixture thickens and reaches the gel stage, which takes about 1 hour.
  13. Remove from heat and let cool for about 5 minutes, skimming off any foam with a metal spoon and stirring occasionally.
  14. Ladle the hot jam into hot sterilized jars, leaving 1/2 inch headspace at the top.
  15. Seal the jars with melted paraffin wax or process according to canning guidelines for safety.
  16. Cover with clean lids and store in a cool, dark, dry place.
