Directions
-
Combine water, chopped cilantro, sliced jalapeño, lime juice, and olive oil in a blender. Blend until smooth. Season the marinade to taste with salt and pepper.
-
Place chicken tenders in a shallow baking dish. Pour the marinade over the chicken, ensuring it is coated completely. Cover and refrigerate for at least 1 hour, or up to 4 hours.
-
Preheat the broiler. Remove chicken from the marinade, discarding the excess liquid. Broil chicken until cooked through, about 3 minutes per side. Set aside to cool slightly.
-
Lightly brush both sides of the red onion and eggplant slices with vegetable oil. Sprinkle both sides with salt and pepper.
-
Broil the vegetables until tender and golden brown, about 2 minutes per side. Remove from oven and set aside.
-
Preheat the oven to 450F (230C).
-
Lightly brush 4 of the tortillas with vegetable oil. Place these tortillas, oil side down, on a baking sheet.
-
Combine the grated Monterey Jack and sharp cheddar cheeses in a small bowl.
-
Sprinkle 1/4 cup of the cheese mixture over each tortilla on the baking sheet.
-
Divide the cooked chicken tenders equally among the tortillas, placing them atop the cheese.
-
Place one slice of red onion and one slice of eggplant atop the chicken on each tortilla.
-
Top each assembly with a remaining un-oiled tortilla. Lightly brush the tops of these tortillas with vegetable oil.
-
Bake quesadillas until the tortillas are slightly crisp and the cheese is fully melted, about 10 minutes.
-
Remove from oven and let cool for a minute. Cut each quesadilla into quarters. Serve immediately with sour cream.

Note
Make Ahead: You can assemble the quesadillas up to 6 hours in advance. Cover tightly with plastic wrap and refrigerate until ready to bake. Add an extra minute or two to the baking time if cooking from cold.
Ingredient Substitutions: If you prefer less heat, remove the seeds from the jalapeño before blending. You can substitute the chicken with shredded rotisserie chicken for faster prep, though the texture will be different.
Cooking Tip: Ensure your broiler is fully preheated before adding the chicken and vegetables to get a good char without overcooking the interior.
