Description

These Spicy Baked Syrup Cakes are a delightful fusion of textures and flavors, offering a warm, comforting dessert experience. The tender cake dough is enriched with butter, oil, and aromatic spices like cinnamon, cloves, and nutmeg. Each small oblong cake is stuffed with a savory-sweet mixture of finely chopped walnuts, butter, and syrup before baking. Once baked, the cakes are dipped in a fragrant syrup made from honey, sugar, orange juice, and lemon, allowing the crust to soften while the interior remains moist. The result is a sticky, indulgent treat that balances sweetness with the warmth of spices. Perfect for holiday gatherings, buffets, or as a special weekend indulgence, these cakes improve in flavor after sitting for a day, making them an excellent make-ahead option for any festive occasion.

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Combine honey, granulated sugar, water, and lemon juice in a saucepan.
  3. Bring the mixture to a boil and cook for 5 minutes, then remove from heat.
  4. Reserve 5 tablespoons of the hot syrup for the filling and set the rest aside to cool slightly.
  5. In a bowl, combine 1 pound of finely chopped walnuts, 1/4 cup softened butter, 2 teaspoons cinnamon, and the reserved 5 tablespoons of syrup to create the filling.
  6. Set the filling aside.
  7. In a large bowl, cream the remaining 1 cup of softened butter with vegetable oil using an electric mixer until light and fluffy.
  8. Gradually beat in the icing sugar on medium speed.
  9. Slowly add orange juice, Cognac or brandy, 1 teaspoon cinnamon, ground cloves, and ground nutmeg to the batter, mixing well.
  10. In a small bowl, sift together baking powder, baking soda, and 2 cups of all-purpose flour.
  11. Gradually add the dry ingredients to the wet mixture, beating for a few minutes until combined.
  12. Mix in the remaining flour by hand until a soft dough forms.
  13. Knead the dough briefly until smooth.
  14. Break off small pieces of dough and shape them into oblongs about 2.5 inches long and 1 inch high.
  15. Flatten each piece between your palms and place 1 teaspoon of the walnut filling in the center.
  16. Enclose the filling by wrapping the dough around it, pressing firmly to seal.
  17. Place the shaped cakes on a baking sheet lined with parchment paper.
  18. Bake for 25 minutes or until lightly golden.
  19. Remove from the oven and let cool on a rack for a few minutes.
  20. Bring the remaining syrup back to a boil.
  21. Dip each baked cake into the hot syrup to coat completely.
  22. Arrange the syrup-coated cakes on a serving platter.
  23. Sprinkle with additional chopped walnuts and cinnamon if desired.
  24. Allow cakes to cool completely before serving.
