  1. Preheat oven to 375F (190C).
  2. Thaw phyllo dough overnight in the refrigerator according to package instructions.
  3. Squeeze excess moisture from the washed spinach using paper towels or a clean kitchen towel until dry.
  4. In a large bowl, whisk together the beaten eggs, crumbled feta, grated parmesan, and softened cream cheese until smooth.
  5. Fold the squeezed spinach, minced garlic, minced onion, cayenne pepper, black pepper, dill, and nutmeg into the cheese mixture. Mix gently until combined.
  6. Unroll the phyllo dough and cover it with a damp towel to prevent drying out. Cut the roll of phyllo into quarters lengthwise.
  7. Keep the unused phyllo covered with the damp towel while you work.
  8. Take one quarter-section of phyllo and separate it into individual sheets.
  9. Stack three phyllo sheets together. Brush each sheet lightly with melted butter.
  10. Place a tablespoon of the spinach filling near one end of the stacked phyllo sheets.
  11. Roll the phyllo tightly around the filling to form a pinwheel.
  12. Place the pinwheel seam-side down on a baking sheet. Repeat with remaining phyllo and filling.
  13. Brush the tops of the pinwheels with remaining melted butter.
  14. Bake for 25-30 minutes, or until golden brown and crispy.
  15. Allow to cool slightly before serving.
