Spinach With Moong Dal
Description
This humble yet satisfying Indian side dish combines the earthy richness of moong dal (split yellow lentils) with the vibrant freshness of spinach. The lentils are simmered until soft and creamy, then blended with wilted spinach and a tangy tamarind paste for depth. A traditional tempering of mustard seeds, fenugreek, dried red chiles, and asafoetida in hot oil adds a crucial aromatic punch that elevates the dish from simple to spectacular. It is light, nutritious, and incredibly versatile, serving as a perfect accompaniment to rice, roti, or plain dal. Ideal for weeknight dinners or as part of a larger vegan feast, this recipe requires minimal ingredients but delivers maximum flavor and comfort.Directions
-
Rinse the moong dal thoroughly in a strainer under running water until the water runs clear.
-
Place the rinsed dal in a large saucepan with 5 cups of water and bring to a boil over medium-high heat.
-
Once boiling, add the frozen spinach and sliced green chiles. Reduce heat to maintain a gentle simmer and cook for 10 minutes.
-
Stir in the tamarind paste, turmeric, sugar, and salt.
-
Continue to simmer uncovered for 15-20 minutes, stirring occasionally, until the dal is soft and the spinach is fully cooked down. Adjust consistency with water if needed.
-
While the dal simmers, heat the corn oil in a small saucepan or skillet over medium heat.
-
When the oil is hot, lower the heat and add the mustard seeds, fenugreek seeds, and dried red chile peppers.
-
Cook, stirring constantly, until the mustard seeds begin to crackle and pop, about 1-2 minutes.
-
Quickly stir in the asafoetida and remove the tempering from heat to prevent burning.
-
Pour the hot tempering over the spinach and dal mixture. Stir well to combine.
-
Taste and adjust salt if necessary. Serve warm.
