  1. Cut the sirloin tip into 4 equal serving-sized pieces.
  2. Season both sides of the steaks generously with salt, pepper, and tarragon. If using a meat tenderizer, pound the steaks gently to an even 1/2-inch thickness.
  3. Heat 1 tablespoon of butter in a large frying pan over medium-high heat.
  4. Add the steaks to the pan. Saut quickly until browned on one side, about 2 to 3 minutes.
  5. Flip the steaks and brown the other side, cooking to your desired doneness (usually another 2 to 3 minutes).
  6. Remove the steaks to a hot platter and cover loosely with foil to keep warm.
  7. Reduce heat to medium. Add 1 more tablespoon of butter to the same pan.
  8. Add the crab meat to the pan and heat through, stirring gently so as not to break up the chunks, for about 1-2 minutes.
  9. Add the white wine and the remaining 1 tablespoon of butter to the pan drippings.
  10. Stir the sauce until the butter is melted and blended with the wine and pan juices.
  11. While the sauce finishes, peel and slice the avocado.
  12. Spoon the heated crab meat over the steaks on the platter.
  13. Pour the white wine butter sauce over the crab and steak.
  14. Garnish each steak with 2 to 3 slices of avocado.
  15. Top with a dollop of sour cream and serve immediately with lemon wedges.
