Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. In an ungreased 9x13-inch metal baking pan, combine 2 1/2 cups flour, 1 1/2 cups sugar, cocoa, baking soda, and salt.
  3. Use a fork to stir the dry ingredients together lightly.
  4. Make three separate wells in the dry mixture using the fork.
  5. Pour the cooking oil into one well, the vinegar into another, and the vanilla extract into the third.
  6. Pour the cold water or coffee over the entire mixture.
  7. Stir with a fork until the batter is just combined and smooth. Do not overmix or beat vigorously.
  8. In a small bowl, mix the remaining 1/4 cup sugar with the cinnamon. Sprinkle this mixture evenly over the top of the batter.
  9. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan on a wire rack before slicing and serving.
