Description

This vibrant stir-fried noodle dish captures the essence of Thai street food with its perfect balance of savory, tangy, and spicy flavors. Flat rice stick noodles are quickly blanched to maintain their chewy texture, then tossed in a hot wok with aromatic garlic, onion, and tender strips of pork loin. The addition of dried shrimp and fresh chilies adds depth and a gentle kick, while bean sprouts provide a crisp, refreshing crunch. Finished with a zesty lime and fish sauce dressing, this meal is both hearty and satisfying.

Directions

  1. Bring a large pot of water to a boil. Add the flat rice stick noodles and cook for about 1 minute, stirring constantly to prevent sticking.
  2. Drain the noodles immediately in a colander and rinse thoroughly with cold water to stop the cooking process. Set aside.
  3. While the noodles cook, slice the pork loin into thin julienne strips. Slice the fresh red chilies if desired.
  4. Heat the vegetable oil in a large wok or skillet over high heat.
  5. Add the crushed garlic and chopped onion to the wok. Stir-fry for 1-2 minutes until fragrant and golden brown.
  6. Add the pork strips, soaked dried shrimp (with their soaking water), and fresh chilies to the wok.
  7. Stir-fry the pork and shrimp mixture for about 5 minutes, or until the pork is cooked through and lightly browned.
  8. Add the blanched noodles, bean sprouts, sugar, fish sauce, salt, lime juice, ketchup, and ground black pepper to the wok.
  9. Toss everything together vigorously for 2 minutes, ensuring the noodles are well-coated with the sauce and ingredients are evenly distributed.
  10. Transfer the stir-fried noodles to a large serving platter.
  11. Garnish generously with chopped green onion, fresh coriander, and crushed roasted peanuts before serving.
