Directions
-
Slice the strawberries and pour 1 cup of water over them. Let them stand at room temperature for 1 hour to infuse the water with flavor. If using frozen strawberries, allow extra time for them to thaw and infuse.
-
Drain the strawberry-infused water into a saucepan, reserving the strawberries for later.
-
Sprinkle the unflavored gelatin over 2 tablespoons of the drained strawberry water and let it sit for a few minutes to soften.
-
In a small bowl, whisk together the cornstarch and egg yolk. Gradually whisk this mixture into the remaining strawberry water in the saucepan.
-
Cook the mixture over medium heat, stirring constantly, until it comes to a boil and thickens slightly.
-
Remove the saucepan from heat. Add the softened gelatin, artificial sweetener, vanilla, and almond extract (if using). Stir well until the gelatin and sweetener are completely dissolved.
-
Stir the reserved sliced strawberries into the thickened strawberry mixture.
-
Chill the mixture for about 30 minutes, or until it is partially set but still fluid enough to fold.
-
In a chilled bowl, beat the egg white, instant skim milk powder, and ice water until stiff peaks form.
-
Gently fold the beaten egg white mixture into the thickened strawberry mixture until just combined. Be careful not to deflate the airy texture.
-
Pour the mousse into serving dishes and refrigerate for at least 1-2 hours, or until fully set, before serving.

Note
The artificial sweetener can be adjusted to taste. If using a liquid sweetener, you may need to reduce the amount of water slightly to maintain the correct consistency.
For a richer flavor, you can add a small amount of real whipped cream instead of the egg white mixture, but this will increase the calorie count.
Ensure the bowl and beaters for the egg whites are completely clean and dry to achieve the best volume when whipping.
Store any leftovers in an airtight container in the refrigerator for up to 2-3 days.
