Description

This traditional strawberry conserve captures the bright, fresh essence of ripe berries in a luscious, spoonable spread. By macerating the fruit overnight, you draw out natural juices that create a rich syrup without heavy boiling. The result is a preserve with distinct strawberry pieces suspended in a glossy, amber glaze. It offers a perfect balance of sweetness and fruit flavor, making it an ideal topping for morning toast, pancakes, or as a glaze for cakes and tarts. Simple to prepare with just two main ingredients, this homemade conserve tastes far superior to store-bought jars and is a wonderful gift or pantry staple.

Ingredients

Directions

  1. Wash strawberries thoroughly, drain well, and remove the green stalks.
  2. Place strawberries in a large bowl and toss with 1/2 cup of the sugar.
  3. Cover the bowl and let stand in the refrigerator overnight to macerate.
  4. Strain the strawberries, reserving the released syrup in a heavy-bottomed pot.
  5. Add the remaining sugar to the syrup in the pot.
  6. Stir over low heat until the sugar is completely dissolved.
  7. Add the drained strawberries back into the pot.
  8. Cook gently, stirring frequently, until the mixture reaches the setting point, about 20 to 30 minutes.
  9. Ladle the hot conserve into warm, sterile jars and seal immediately.
