Description

This unique twist on classic meatloaf features a lean ground beef exterior rolled around a hearty filling of long-grain wild rice, wilted spinach, grated carrots, and melted Monterey Jack cheese. The combination of savory meat and creamy, vegetable-packed stuffing creates a delicious contrast in textures and flavors. Glazed with a sweet and tangy barbecue sauce during the final stages of baking, this dish offers a sticky, caramelized crust that complements the tender interior. It is an excellent option for family dinners or potlucks, offering a comforting, home-style meal that feels special yet is straightforward to prepare. Serve with mashed potatoes or roasted vegetables for a complete, satisfying plate.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. In a large bowl, combine ground hamburger, bread crumbs, 1/2 cup of the barbecue sauce, and the beaten egg. Mix until just combined.
  3. Place a sheet of waxed paper on a clean work surface. Spread the meat mixture onto the paper.
  4. Place another sheet of waxed paper over the meat. Press or roll out the meat into a rectangle approximately 15 by 10 inches.
  5. In a separate bowl, prepare the stuffing mix according to package directions, then stir in the chopped spinach and grated carrot.
  6. Remove the top layer of waxed paper from the meat. Spread the stuffing mixture evenly over the meat, leaving a small border around the edges.
  7. Sprinkle the grated Monterey Jack cheese evenly over the stuffing.
  8. Using the bottom sheet of waxed paper, carefully roll the meat up into a log, starting from one of the short ends.
  9. Securely wrap the rolled meatloaf in plastic wrap or fresh waxed paper. Refrigerate for several hours or overnight to firm up.
  10. Remove wrapping and place the meatloaf seam-side down in a baking dish. Bake for 1 hour.
  11. Brush the remaining 1/2 cup of barbecue sauce over the top of the meatloaf.
  12. Continue baking for 15-20 minutes, or until the internal temperature reaches 160F (71C).
  13. Let rest for 10 minutes before slicing and serving.
