Directions

  1. Combine 1/2 cup sugar and 2 tablespoons water in a heavy small saucepan.
  2. Cook over low heat, stirring constantly until the sugar completely dissolves.
  3. Transfer the sugar syrup to the top of a double boiler.
  4. Add the cranberries to the syrup in the double boiler.
  5. Cover the berry mixture and place over simmering water.
  6. Cook for 45 minutes, stirring occasionally to ensure even coating.
  7. Remove the double boiler from the heat.
  8. Let the cranberry mixture stand at room temperature overnight to cool and thicken.
  9. Place the remaining 1/2 cup sugar on a plate.
  10. Drain the cranberries well from the syrup.
  11. Add the drained cranberries to the sugar and toss gently to coat evenly.
  12. Let the candied cranberries dry at room temperature for at least 30 minutes.
  13. Cover and refrigerate if not using immediately; can be prepared up to 3 days ahead.
