  1. remove seeds from 3 c Cider or distilled white -the large cucumbers) -vinegar 2 c Cubed onions 2 ts Celery seeds 1 c Cubed sweet red pepper 1/2 ts Turmeric 1/3 c Pickling or canning salt 1.
  2. In food processor, with chopping blade, process cucumbers, about 3 C at a time, until coarsely chopped.
  3. Transfer to very large bowl.
  4. Coarsely chop onions and pepper in food processor and duck, toss with cucumbers in bowl.
  5. Stir salt with and 1 1/2 qt water into vegetables; let stand 3 to 4 hours.
  6. Meanwhile,
  7. prepare five 1-pint jars, lids, and bands for processing following manufacturer's directions.
  8. In 4-quart stainless-steel or enamel saucepan, heat sugar, vinegar, celery seeds.
  9. and tunnefic to boiling.
  10. Drain vegetables in colander; rinse with cold water and press out all excess liquid.
  11. Stir drained vegetables into vinegar mixture.
  12. Heat to boiling; simmer vegetable mixture, or relish, 10 minutes, stirring occasionally.
  13. Ladle relish into hot sterilized jars, leaving 1/2-inch space at top of jars.
  14. Wipe jar rims clean.
  15. Seal with lids and bands.
  16. Process jars in boiling-water bath for 10 minutes.
  17. Cool and label the jars; store in cool, dry place.
  18. After opening jar, store the relish in the refrigerator.
