Sweet German Mustard
Description
This homemade Sweet German Mustard offers a delightful balance of tangy vinegar, warm spices, and subtle sweetness. Unlike store-bought varieties, this recipe allows the natural flavor of whole mustard seeds to shine through, creating a coarse, textured condiment that pairs beautifully with grilled sausages, pork dishes, or hearty sandwiches. The addition of brown sugar and aromatic spices like cinnamon, allspice, and cloves provides a complex depth of flavor that is both comforting and sophisticated. Easy to make with pantry staples, this versatile sauce adds a gourmet touch to everyday meals.Directions
-
In a bowl, combine the whole mustard seeds, dry mustard powder, hot water, and 1/2 cup of the cider vinegar. Let this mixture soak for at least 3 hours to soften the seeds.
-
In a saucepan, combine the remaining 1/2 cup cider vinegar, cold water, onion slices, brown sugar, salt, garlic cloves, cinnamon, allspice, tarragon, dill seeds, and whole cloves.
-
Bring the saucepan mixture to a boil over medium heat. Boil for one minute, then cover the pan and let it stand for one hour to infuse the flavors.
-
Scrape the soaked mustard seed mixture into a blender.
-
Strain the hot spice infusion from the saucepan into the blender, pressing on the solids with a spoon to extract all the liquid flavor. Discard the solids.
-
Process the mixture in the blender until it reaches a coarse puree consistency, ensuring a definite grainy texture remains.
-
Pour the blended mustard into the top of a double boiler set over simmering water.
-
Cook for 10 minutes, stirring often, until the mixture is noticeably thicker.
-
Remove from heat and stir in the corn syrup.
-
Pour the finished mustard into a clean storage jar. Let it cool uncovered, then cap and store in the refrigerator.
