Ingredients

Directions

  1. Rub the inside of a large heavy saucepan or fondue pot thoroughly with the cut side of the garlic clove.
  2. Discard the used garlic clove.
  3. Combine the grated Emmental and Gruyère cheeses with the cornstarch in a bowl, tossing to coat the cheese evenly.
  4. Pour the dry white wine and freshly squeezed lemon juice into the garlic-rubbed pot.
  5. Heat the wine mixture over medium-low heat until it is hot but not boiling.
  6. Add the cheese mixture to the hot wine, stirring constantly in a figure-eight motion with a wooden spoon.
  7. Continue stirring until all the cheese is melted and the fondue is smooth and creamy.
  8. Stir in the Kirschwasser, ground nutmeg, and black pepper to taste.
  9. Cook for one minute longer, stirring gently, then transfer to a heated fondue pot if necessary.
  10. Adjust the flame underneath the pot so that the fondue bubbles lightly.
  11. Serve immediately with cubes of French or Italian bread and/or raw vegetables for dipping.

Note

For best results, grate your own cheese; pre-shredded cheese contains anti-caking agents that can prevent smooth melting.

If Kirschwasser is unavailable, you can substitute with a splash of brandy or extra dry white wine, though the traditional cherry brandy adds a distinct aroma.

To keep the fondue warm at the table, use a fondue burner set to low heat. Stir occasionally to prevent the cheese from settling or burning.

If a piece of bread sinks to the bottom, it is traditionally considered good luck to eat it.

Vegetables like broccoli, cauliflower, and carrots should be blanched briefly before serving to ensure they are tender when dipped.
