  1. Press the tofu firmly to remove excess moisture, then slice into large cubes.
  2. Dissolve saffron threads in 1/2 cup hot water and let it steep for 5 minutes.
  3. In a food processor, pulse green onions and ginger briefly until chopped.
  4. Drop in garlic cloves one at a time and process for 30 seconds until smooth.
  5. Add soy yogurt, chili powder, paprika, garam masala, brown sugar, soy sauce, salt, pepper, and the saffron water to the processor.
  6. Blend for 1 minute until the marinade is smooth and well combined.
  7. Place tofu cubes in a glass dish and pour half of the marinade over them. Toss to coat evenly.
  8. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, allowing the tofu to absorb the flavors.
  9. Preheat your grill to medium-high heat.
  10. Quarter the red onions and remove the papery outer skins.
  11. Thread the marinated tofu, onion quarters, mushrooms, cherry tomatoes, and green pepper slices alternately onto skewers.
  12. Place the skewers on the hot grill.
  13. Brush the brochettes generously with the remaining marinade.
  14. Cover the grill tightly and let the food smoke and cook for 5 minutes without opening the lid.
  15. Open the grill, turn the skewers over, and brush with any remaining marinade if desired.
  16. Cover again and cook for another 3 to 5 minutes, or until the vegetables are tender and the tofu is charred and heated through.
  17. Remove from the grill and garnish with fresh cilantro leaves and lemon wedges before serving.
