Ingredients

Directions

  1. Preheat the oven to 450 degrees F (232ðC).
  2. Seed the bell pepper and cut into strips.
  3. In a 10-inch skillet over medium heat, cook the chorizo sausage, chopped onion, and bell pepper strips, stirring frequently, until the sausage is browned and cooked through, about 10 minutes. Drain excess grease and set aside.
  4. In a separate skillet, melt 1 tablespoon of margarine or butter over medium heat.
  5. Pour in the beaten eggs. As the eggs begin to set at the bottom and sides, gently lift the cooked portions with a spatula to allow uncooked egg to flow underneath. Avoid constant stirring.
  6. Cook until the eggs are thickened throughout but still moist, about 5 minutes. Remove from heat.
  7. Spoon about 1/4 cup of the sausage mixture onto each flour tortilla.
  8. Top each with about 1/4 cup of the scrambled eggs and 2 tablespoons of the shredded cheese mixture.
  9. Fold the tortillas in half.
  10. Arrange 5 assembled tacos in a single layer in an ungreased 15 1/2 x 10 1/2 x 1-inch jelly roll pan. Brush tops with melted margarine.
  11. Bake until light golden brown and cheese is melted, about 10 to 12 minutes.
  12. Remove from oven and repeat the process with the remaining 5 tacos.
  13. Serve immediately with guacamole and fresh tomato salsa.

Note

Use 7 to 8-inch flour tortillas for the best size and folding ability.

For the cheese mixture, use a blend of shredded Colby and Monterey Jack cheeses for optimal melting and flavor.

If desired, prepare Southwest Guacamole and Fresh Tomato Salsa to serve on the side.

These tacos are best served hot and fresh from the oven. Do not store leftovers for more than a day, as the tortillas will lose their crispness.
