  1. Shred the cabbage, julienne the carrot, and dice the celery and mushrooms into small, uniform pieces.

  3. Add the minced chicken breast to the wok. Cook, breaking up the meat with a spatula, until the chicken is no longer pink and fully cooked through.

  5. Transfer the vegetable and chicken mixture to a strainer or colander set over a bowl. Refrigerate for at least 2 hours, or until the mixture is completely cool and excess moisture has drained. This prevents soggy rolls.
