Directions

  1. Preheat oven to 350°F (177°C). Position rack in the lower third of the oven.
  2. Coat an 8-inch round cake pan with butter and line with parchment paper if necessary.
  3. Place chopped semisweet chocolate in a large heatproof bowl.
  4. In a small bowl, combine 1 whole egg, 1 egg yolk, and vanilla extract; set aside.
  5. In a saucepan, combine cocoa powder, flour, and 2/3 cup granulated sugar.
  6. Whisk in enough milk to the cocoa mixture to form a smooth paste, then whisk in the egg mixture.
  7. Stir the chocolate mixture into the cocoa-egg mixture until fully combined.
  8. In a clean bowl, beat egg whites and cream of tartar at medium speed until soft peaks form.
  9. Increase speed to high and gradually add remaining 1/4 cup sugar, beating until stiff peaks form.
  10. Gently fold the whipped egg whites into the chocolate batter in three additions until no white streaks remain.
  11. Pour batter into the prepared cake pan.
  12. Place the cake pan in a larger roasting pan and fill the roasting pan with boiling water halfway up the sides of the cake pan.
  13. Bake for 35-40 minutes, or until the center is just set but still slightly jiggly.
  14. Remove cake pan from water bath and cool completely on a wire rack.
  15. Refrigerate the cooled cake for at least 24 hours to firm up.
  16. For the sauce, process frozen raspberries and their syrup in a blender until smooth.
  17. Strain the raspberry mixture through a fine-mesh sieve to remove seeds, if desired.
  18. To serve, run a thin knife or metal spatula around the sides of the pan to loosen the cake.
  19. Invert the cake onto a serving plate and remove the pan.
  20. Slice and serve with a drizzle of raspberry sauce and a dusting of confectioner's sugar.
  21. Garnish with fresh raspberries.
