Ingredients

Directions

  1. Prepare the gluten dough by mixing vital wheat gluten flour (or whole wheat flour) with water and 1/3 cup of light yeast flavoring until a stiff dough forms.
  2. Roll the dough out into a large rectangle approximately 15 inches long and 8 to 10 inches wide.
  3. Sprinkle the rolled-out dough with the remaining 1/3 cup of light yeast flavoring if not already incorporated into the dough.
  4. Roll the dough up tightly lengthwise to form a long log.
  5. Lay out a yard of cheesecloth and place the gluten roll in the center.
  6. Wrap the gluten roll loosely in the cheesecloth, tying the ends securely but allowing room for the gluten to expand during cooking.
  7. Place the wrapped roll in a large pot and cover with 1 gallon of water plus 2/3 cup of light yeast flavoring.
  8. Bring the water to a boil, then reduce heat to low and simmer for 1.5 hours.
  9. Remove the pot from heat and let the gluten roll cool in the liquid; reserve the cooking liquid for gravy.
  10. Untie the cheesecloth and carefully remove it from the cooked gluten roll.
  11. Unroll the gluten sheet and fill it with your chosen stuffing, or mound stuffing on a baking sheet and wrap the gluten around it.
  12. Soak yuba (Chinese bean curd sheets) in warm water for 5 minutes until soft and pliable.
  13. Place the stuffed gluten "turkey" on a large greased baking sheet.
  14. Cover the entire surface of the turkey with 2 to 3 layers of the soaked yuba sheets.
  15. Melt 1/3 cup of margarine and brush a generous amount over the yuba-covered turkey.
  16. Mix 1/3 cup white wine with the remaining margarine to create a basting mixture.
  17. Bake according to Part Two instructions, basting periodically with the wine-margarine mixture.
