Description

This decadent cheesecake features a dense, creamy filling infused with citrus zest and vanilla, set on a crunchy graham cracker crust. The addition of sour cream on top before chilling adds a tangy richness that balances the sweetness perfectly. It is crowned with a fresh medley of mango, raspberries, and kiwi, providing a bright, fruity contrast to the indulgent cheese base. Ideal for celebrations or special evenings, this dessert offers a luxurious texture and complex flavor profile that will impress any guest.

Directions

  1. Preheat oven to 450°F (232°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/2 cup sugar. Toss with a fork until the mixture is evenly moistened and resembles wet sand.
  3. Transfer the crust mixture to a 9-inch springform pan. Press firmly and evenly onto the bottom and up the sides of the pan.
  4. Bake the crust for 5 minutes until golden. Remove from oven and allow to cool slightly. Reduce oven temperature to 300°F (149°C).
  5. In a large bowl, beat the softened cream cheese, 1 3/4 cups sugar, flour, lemon peel, orange peel, and vanilla extract at high speed until completely smooth and blended.
  6. Reduce mixer speed to medium. Beat in the whole eggs and egg yolks one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides of the bowl occasionally.
  7. Beat in the heavy cream until just combined. Do not overmix.
  8. Pour the filling into the prepared crust.
  9. Bake at 300°F (149°C) for 1 hour and 10 minutes. The center should still be slightly loose but will set as it cools.
  10. Remove from oven and place the cake on a wire rack to cool for 2 hours.
  11. Once cooled, spread the sour cream evenly over the top of the cheesecake, leaving a 1/2-inch border around the edge.
  12. Refrigerate the cheesecake for at least 3 hours, or preferably overnight, to allow it to set completely.
  13. To prepare the topping, pare the mango and slice the flesh from the pit. Cut the mango into small triangles.
  14. Arrange the mango triangles, kiwi slices, frozen raspberries, and fresh raspberries decoratively on top of the chilled cheesecake just before serving.
