  1. Drain tofu and cut into 1/2-inch cubes; pat dry thoroughly with paper towels.
  2. Separate napa cabbage leaves, rinse, and pat dry; cut crosswise into 1-inch strips.
  3. In a small bowl, whisk together water, 1 tablespoon cornstarch, and 3 tablespoons soy sauce to create the sauce; set aside.
  4. Cut pork into thin slices, then into thin strips.
  5. In a separate bowl, combine remaining 1 tablespoon cornstarch, remaining 1 tablespoon soy sauce, minced ginger, minced garlic, sugar, and pork strips; toss to coat evenly.
  6. Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat until shimmering.
  7. Add pork strips and stir-fry for 2 minutes until cooked through; remove from pan and set aside.
  8. Add remaining 1 tablespoon oil to the hot pan.
  9. Add chunked onion and stir-fry for 2 minutes until softened.
  10. Add napa cabbage and stir-fry for 1 minute until slightly wilted but still crisp.
  11. Add chunked tomatoes, cooked pork, and the prepared soy sauce mixture to the pan.
  12. Cook and stir gently for 1-2 minutes until the sauce boils and thickens.
  13. Gently fold in the tofu cubes; heat through for 1 minute without breaking the tofu.
