Description

  1. chopped 3 1/2 c (or more) canned -vegetable broth 1 1/2 c Sauvignon Blanc or -other dry white wine 1 7-oz jar roasted red bell -peppers, drained 1/2 c Chopped fresh basil 1/3 c Chopped fresh parsley 2 tb Chopped fresh thyme OR 2 ts Dried 1/3 c Whipping
  2. cream 6 tb Tomato paste 4 ts Minced garlic 2 c Vegetable oil (for deep -frying) 1 lg Leek (white and pale green -parts only), halved -lengthwise,
  3. cut into -matchstick-size strips
  4. Heat olive oil in large saucepan over medium
  5. heat .
  6. Add chopped leeks; saute until tender, about 10 minutes.
  7. Add tomatoes, 3 1/2 C broth, wine, peppers, herbs, cream, tomato paste and garlic.
  8. Simmer 1 hour, stirring occasionally.
  9. Coarsely puree in batches in processor.
  10. (Can be made 1 day ahead.
  11. Cover, chill.) Heat 2 C oil in another large saucepan to 375'F.
  12. Add leek strips and fry until golden and crisp, about 2 minutes.
  13. Using slotted spoon, trans- fer leek to paper towels and drain.
  14. Bring soup to simmer, thinning with more broth, if desired.
  15. Season with salt and pepper.
  16. Ladle soup into bowls.
  17. Garnish with fried leek and serve.
