Description

This homemade Tomato Apple Catchup is a sophisticated twist on the classic ketchup, offering a complex balance of sweet, tart, and savory flavors. The combination of ripe tomatoes and tart apples creates a vibrant base, while aromatics like onions and garlic add depth. Infused with warm spices such as cinnamon, cloves, and allspice, this sauce has a luxurious texture and a vibrant red hue. It is perfect for drizzling over roasted vegetables, pairing with grilled meats, or adding a gourmet touch to burgers and fries. The natural sweetness of the apples reduces the need for excessive sugar, making it a healthier alternative to store-bought versions. Ideal for preserving in jars, this catchup keeps well and makes a thoughtful gift or pantry staple for everyday cooking.

Ingredients

Directions

  1. Combine the cored tomatoes and quartered apples in a large pot, cover, and simmer until soft.
  2. Press the softened tomato and apple mixture through a coarse sieve to remove skins and seeds.
  3. In a separate pot, combine the sliced onions, peeled garlic cloves, and 2 cups of cold water.
  4. Cover the onion mixture and cook for 20 minutes until tender.
  5. Strain the onion and garlic mixture through a coarse sieve, discarding the solids, and add the liquid to the tomato pulp in a large pickling kettle.
  6. Add the salt, pepper, and sugar to the kettle and stir to combine.
  7. Place the celery seed, mustard seed, allspice, cloves, and cinnamon stick into a cheesecloth bag, tie securely, and add to the mixture.
  8. Simmer the mixture uncovered for 1 hour, stirring occasionally.
  9. Add the white vinegar and continue to cook uncovered, stirring frequently, until the sauce thickens, about 2 hours.
  10. Remove the spice bag from the kettle.
  11. Pour the hot catchup immediately into clean, hot preserve jars and seal according to the manufacturer's directions.
