This hearty Tortilla Stack is a comforting twist on classic Mexican flavors, perfect for busy weeknights. Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it apart with a spoon, until fully cooked. Drain any excess fat.
  3. Stir the taco seasoning mix and half a cup of water into the beef. Simmer for 2-3 minutes until the sauce thickens slightly. Remove from heat.
  4. Spread a thin layer of cheddar cheese soup on the bottom of the prepared baking dish.
  5. Arrange a layer of tortilla wedges over the soup, overlapping slightly to cover the bottom.
  6. Spread half of the seasoned beef mixture over the tortillas.
  7. Layer another set of tortilla wedges over the beef, then spread the remaining cheddar cheese soup over them.
  8. Top with the remaining beef mixture and sprinkle with chopped tomatoes.
  9. Cover the dish with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until the edges are golden and the cheese is bubbly.
  10. Let cool for 5 minutes before slicing into squares and serving.

Note

For a vegetarian version, substitute the ground beef with black beans or lentils seasoned with the taco mix.

You can add extra toppings like shredded lettuce, sour cream, or sliced jalapeños after baking for fresh contrast.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.

If the soup is too thick to spread easily, thin it with a splash of milk or water.
