Description

This elegant Tortoni brings the nostalgia of old-world cafes to your home freezer. The recipe features a delightful contrast of textures: a crisp, sweet crust made from Amaretti and graham cracker crumbs, topped with a rich, creamy layer of vanilla ice cream studded with juicy maraschino cherries and dark chocolate. The subtle addition of prune puree in the crust adds depth and helps bind the mixture without overpowering the delicate vanilla notes. Perfect for holiday gatherings, romantic dinners, or as a sophisticated make-ahead dessert, these individual portions are easy to serve and visually stunning. Simply scoop, freeze, and serve for a refreshing treat that feels indulgent yet simple to prepare.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. In a medium bowl, combine Amaretti cookie crumbs, graham cracker crumbs, and granulated sugar.
  3. Add prune puree to the crumb mixture and blend thoroughly using a pastry blender or fork until the mixture resembles wet sand.
  4. Spread the crumb mixture in an even layer on a baking sheet.
  5. Bake for 10 minutes, stirring once after 5 minutes, until lightly toasted. Remove from oven and allow to cool completely.
  6. Line twelve 2 3/4-inch muffin tin cups with fluted paper or foil liners.
  7. Spoon approximately 1 tablespoon of the cooled crumb mixture into the bottom of each lined cup and press down gently to form a crust.
  8. In a large bowl, fold the halved maraschino cherries and chopped chocolate into the softened vanilla ice cream until evenly distributed.
  9. Spoon the ice cream mixture into the muffin cups, dividing it equally among the liners.
  10. Top each cup with the remaining crumb mixture, dividing it equally and patting down lightly to adhere.
  11. Cover the tray tightly with plastic wrap or foil and freeze for at least 2 hours, or until firm.
  12. Remove from freezer 5 minutes before serving to allow slight softening for easier scooping.

Note

Storage: Tortoni can be prepared ahead and stored in the freezer for up to 2 weeks. Keep tightly covered to prevent freezer burn and absorption of other odors.

Substitutions: You can substitute regular full-fat vanilla ice cream for a richer texture, or use frozen yogurt for a lighter alternative. If prune puree is unavailable, you can use a small amount of honey or maple syrup mixed with a teaspoon of water to bind the crumbs.

Tips: Ensure the ice cream is softened enough to mix easily but still cold enough to scoop. If it becomes too soft, chill the bowl for 10 minutes before mixing in the cherries and chocolate.
