Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Lightly butter three 9-inch round cake pans with 1-3/4-inch-high sides.
  3. Line the bottoms of the pans with waxed paper or parchment paper rounds, then butter the paper.
  4. In a heavy saucepan, bring water and instant espresso powder to a boil.
  5. Remove from heat and whisk in unsweetened cocoa powder until completely smooth. Allow to cool completely.
  6. In a medium bowl, sift together all-purpose flour, baking powder, baking soda, and salt.
  7. In a large bowl, beat room-temperature unsalted butter with an electric mixer until fluffy.
  8. Add brown sugar in 4 additions, beating well after each addition and scraping down the sides of the bowl occasionally.
  9. Add eggs and egg yolks one at a time, beating just until blended after each addition.
  10. Using a rubber spatula, mix the dry ingredients into the butter mixture alternately with the cooled cocoa mixture, beginning and ending with the dry ingredients.
  11. Divide the batter evenly among the three prepared pans.
  12. Bake until a toothpick inserted into the centers comes out clean, about 23 minutes.
  13. Cool cakes in pans on wire racks for about 10 minutes.
  14. Turn out onto racks, peel off the waxed paper, and cool completely.
  15. For the frosting: Carefully split vanilla beans lengthwise and scrape the seeds into a heavy saucepan.
  16. Add whipping cream, sugar, egg yolks, and salt to the saucepan and blend well.
  17. Stir constantly over medium-low heat until the custard thickens and leaves a path on the back of a spoon when drawn across, about 7 minutes. Do not boil.
  18. Mix in chopped bittersweet chocolate, softened unsalted butter, and light corn syrup.
  19. Remove from heat and stir until smooth.
  20. Mix in sour cream.
  21. Transfer frosting to a bowl and refrigerate until spreadable, stirring occasionally, about 1 hour.
  22. Place one cake layer on a platter and spread 1 cup of frosting over the top.
  23. Repeat with the second cake layer and another cup of frosting.
  24. Top with the third cake layer.
  25. Spread the remaining frosting over the top and sides of the cake, swirling decoratively.
  26. Sprinkle white and milk chocolate shavings thickly over the top of the cake.

Note

Preparation Ahead: The cake layers can be prepared 1 day ahead. Return the cooled cakes to their pans and cover tightly with foil. Let stand at room temperature until ready to frost.

Frosting Storage: The assembled cake can be made 1 day ahead. Cover with a cake dome and chill in the refrigerator. Let stand at room temperature for 1 hour before serving to allow the flavors to soften and the texture to become ideal.

Ingredient Note: Use bittersweet or semi-sweet chocolate for the frosting, not unsweetened cocoa powder, to achieve the correct ganache consistency and flavor.

Safety: Be careful when handling boiling water and hot custard. Ensure the cocoa mixture is completely cooled before adding it to the batter to prevent melting the butter or cooking the eggs.
