Description

This robust turkey stuffing combines the rich flavors of mild or hot sausage with the earthy texture of wild and white rice. Aromatics like onion, celery, sweet pepper, and garlic are sautéed in butter to build a deep flavor base. The addition of chopped pecans adds a delightful crunch, while Worcestershire sauce provides a savory umami kick. This recipe is versatile enough to be baked in a dish or used to stuff a turkey. It serves eight people comfortably, making it perfect for holiday gatherings or hearty weeknight dinners. The optional oysters add a luxurious coastal touch, though the dish remains delicious without them.

Directions

  1. Preheat oven to 350°F (175°C).
  2. Remove sausage from casings and crumble the meat.
  3. Melt butter in a large, heavy skillet or sauté pan over medium-high heat.
  4. Add sausage, onion, celery, and sweet pepper to the pan.
  5. Cook until sausage is browned and vegetables are softened, about 5 minutes.
  6. Stir in minced garlic and sauté for 1 minute until fragrant.
  7. Remove pan from heat.
  8. Stir in parsley, chopped giblets/neck meat, white rice, wild rice, drained oysters, pecans, and Worcestershire sauce.
  9. Mix thoroughly and season with salt and pepper to taste.
  10. Transfer mixture to a baking dish or use to stuff a turkey cavity.
  11. If baking in a dish, cover tightly with foil.
  12. Bake in preheated oven until heated through, about 30 minutes.
