  1. Preheat oven to 350 degrees.
  2. Coat bottom and part way up the sides of a 9-by-13-by-2-inch baking pan with canola cooking spray.
  3. Add gingersnap crumbs and tilt pan from side to side to coat bottom evenly with cookie crumbs; set aside.
  4. Mix brown sugar, flour, oats, and pumpkin pie spice together in a bowl.
  5. Drizzle melted butter and maple syrup over the dry mixture and blend with a pastry blender or fork until mixture is crumbly; set aside.
  6. Beat cream cheese and 3/4 cup sugar in a mixing bowl with an electric mixer on medium speed until smooth and fluffy.
  7. Beat in eggs and egg substitute, one at a time, until smooth.
  8. Pour filling over gingersnap crust in prepared pan.
  9. Sprinkle streusel topping evenly over the cream cheese mixture.
