  2. Grease an 8x8-inch baking dish or a 2.5-quart baking dish.
  3. Peel and cut the apples and potato into chunks.
  4. Using a food processor fitted with a grater blade, grate the apples and potatoes.
  5. Transfer the grated mixture to a large bowl and stir in the fresh lemon juice to prevent browning.
  6. Switch the food processor bowl to a steel chopping blade.
  7. Peel and cut the carrots and lemon into chunks, then chop them finely in the processor.
  8. Add the chopped carrots and lemon to the apple and potato mixture in the bowl.
  9. Stir in the golden raisins, 3 tablespoons of melted margarine, thawed orange juice concentrate, salt, cinnamon, sugar, and matzo meal.
  10. Mix all ingredients thoroughly until well combined.
