Description

This decadent Chocolate Chip Torte is a show-stopping dessert that balances airy sweetness with deep chocolate richness. The unique base uses crushed potato chips folded into a stiff meringue, creating a light, crisp texture that contrasts beautifully with the dense, velvety chocolate custard filling. The filling is made by slowly cooking chocolate, milk, and egg yolks into a thick, luxurious sauce. It’s an impressive yet approachable treat for special dinners or weekend baking projects. Serve chilled for the best texture, ensuring the meringue stays crisp while the filling sets firmly. A memorable twist on traditional torte recipes.

Directions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. In a clean bowl, beat egg whites with salt and cream of tartar until foamy.
  3. Gradually add 1 cup of the sugar, beating until meringue forms stiff, glossy peaks (about 10-15 minutes).
  4. Gently fold in the vanilla extract and crushed potato chips.
  5. Line a baking sheet with parchment paper.
  6. Divide meringue mixture in half, spreading each half into two 9-inch rounds, about 3/4-inch thick.
  7. Bake for 45 minutes until dry to the touch. Turn off oven and let meringues cool inside with door slightly ajar.
  8. For the filling, combine chocolate and milk in a heavy saucepan.
  9. Heat over medium heat, stirring constantly until chocolate is completely melted.
  10. In a small bowl, whisk together the remaining 1/3 cup sugar, flour, and salt.
  11. Slowly whisk the sugar mixture into the hot chocolate mixture.
  12. Cook and stir constantly until the mixture thickens significantly, about 10-15 minutes.
  13. In a separate small bowl, lightly beat the egg yolks.
  14. Temper the yolks by slowly adding a few spoonfuls of the hot chocolate mixture, then pour the yolk mixture back into the saucepan.
  15. Cook for 3 more minutes, stirring constantly, until thickened.
  16. Remove from heat and stir in butter and vanilla (if using additional butter/vanilla as per traditional filling, otherwise just cool).
  17. Cool the chocolate filling to room temperature.
  18. Place one meringue disk on a serving plate. Spread the cooled chocolate filling evenly over the top.
  19. Top with the second meringue disk.
  20. Spread whipped cream around the sides of the torte for decoration.
  21. Chill in the refrigerator for at least 2 hours before serving, but no longer than a few hours to prevent meringue from softening.
  22. Serve with additional whipped cream or vanilla ice cream.
