A wonderful way to end any meal, especially on special occasions. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.Directions
-
Heat the milk in a heavy saucepan with the vanilla pod and salt. When the pod is soft, split it and scrape the seeds into the milk. If using only extract, add it to the milk later.
-
Continue heating the milk gently until it comes to a boil, then turn off the heat and allow it to steep.
-
Meanwhile, sponge the gelatin in cold water if using powdered gelatin, or soak leaf gelatin in cold water until soft and pliable.
-
Beat the egg yolks in a large bowl until they lighten in texture. Gradually add the castor sugar, beating continuously until the mixture is very thick, pale, and forms a ribbon.
-
Dissolve the softened gelatin in a hot water bath. Strain the hot milk to remove the vanilla pod, keeping the seeds.
-
Add the dissolved gelatin to the hot milk. Slowly pour the hot milk mixture into the egg and sugar mixture, beating constantly to temper the eggs.
-
Return the mixture to the saucepan and heat very gently, stirring continuously, until it thickens and coats the back of a wooden spoon (approx. 170-175°F). Do not let it boil or the yolks will curdle.
-
Place the saucepan in a bowl of cold water to cool the custard rapidly, stirring occasionally. Change the water if it warms up.
-
In an ice-cold bowl, whip the chilled cream until it just begins to thicken. Sprinkle in the powdered sugar and continue whipping until quite stiff but not buttery.
-
When the custard is cold and begins to set lightly, pour it into a large bowl. Gently fold in the whipped cream until homogenous.
-
Pour the mixture into a prepared mold or serving dish. Refrigerate for at least 3 hours to set.
