Ingredients

Directions

  1. Preheat your oven to 375&# 194;°F (190ðC) and grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, sift together the flour, cake flour, baking powder, baking soda, and salt to remove lumps and aerate the mixture.
  3. In a separate small bowl, toss the miniature semisweet chocolate chips with 1 tablespoon of the dry flour mixture to prevent them from sinking to the bottom.
  4. In a mixing bowl, cream the softened butter and light brown sugar together until light and fluffy, about 3 minutes.
  5. Beat in the eggs one at a time, then mix in the melted unsweetened chocolate and vanilla extract until well combined.
  6. Add the sifted dry ingredients to the wet mixture alternately with the soured half-and-half (half-and-half mixed with lemon juice), beginning and ending with the dry ingredients. Mix just until combined.
  7. Gently fold in the chocolate chips and chopped pecans with a spatula.
  8. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Bake for 20 minutes, or until a wooden pick inserted into the center of a muffin comes out clean and dry.
  10. Allow the muffins to cool in the pan for 5 minutes, then remove them to a wire rack to cool completely.
