  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Peel, core, and chop the green apples.
  3. In a saucepan, combine the chopped apples, white wine, juice of one lemon, minced shallots, and minced garlic.
  4. Cook over medium heat, stirring occasionally, until the apples are soft and the liquid has reduced slightly.
  5. Remove from heat and puree the mixture until smooth. Set aside.
  6. Bring a large pot of salted water to a boil, then reduce heat to maintain a gentle simmer.
  7. In a mixing bowl, combine the apple puree, lightly beaten eggs, flour, 1 teaspoon of salt, and baking powder. Mix until a thick batter forms.
  8. Place a colander with large holes over the simmering water. Spoon the spaetzle batter into the colander and press through the holes with a rubber spatula into the hot water.
  9. Cook the spaetzle until they float to the surface, then cover and let them simmer for another minute until fluffy.
  10. Remove the spaetzle from the water and immediately transfer them to a bowl of ice water to shock and stop the cooking process.
  11. Drain the spaetzle well and set aside.
  12. In a large oven-safe saute pan, heat olive oil over high heat until smoking.
  13. Season the veal chops with salt, pepper, and essence. Sear the chops in the hot pan for 2-3 minutes on each side until browned.
  14. Remove the chops from the pan and let them cool slightly.

  22. To serve, spoon the veal reduction and apple sauce onto the center of a platter.
  23. Mound the sauteed spaetzle in the center of the sauce.
  24. Place the veal chops on top of the spaetzle, arranging bones so they cross.
  25. Garnish with chopped chives and a pinch of essence.
