Ingredients

Directions

  1. Place veal scallops between two sheets of waxed paper or plastic wrap and pound gently until they are about 1/8 inch thick.
  2. Blot the meat dry with paper towels, then lightly dust with flour, shaking off any excess.
  3. Heat 1 tablespoon of olive oil and half of the butter in a large skillet over medium heat.
  4. When the butter is sizzling, add veal slices in batches, browning on both sides until golden.
  5. Remove browned veal to a plate and keep warm.
  6. Add more oil and butter to the skillet as needed for subsequent batches.
  7. Remove the skillet from heat and add the lemon juice and remaining butter, scraping up any browned bits from the bottom of the pan.
  8. Stir in the chopped parsley and return the veal to the skillet, tossing to coat in the sauce.
  9. Season with salt and pepper to taste and cook over medium heat for about 5 minutes to allow flavors to meld.
  10. Transfer veal to a serving platter, pouring the pan juices over the top, and garnish with thin lemon slices.
