  1. Preheat oven to 400 degrees Fahrenheit (204&# 194;°C).
  2. Cut the potato into 1-inch cubes.
  3. Peel the garlic cloves.
  4. Cook the potatoes and garlic in boiling water for about 15 minutes or until tender.
  5. Drain the potatoes and garlic, reserving 2 tablespoons of the cooking water.
  6. Mash the potatoes, garlic, and reserved cooking liquid together.
  7. Stir in the Parmesan cheese, egg, nutmeg, and pepper.
  8. Combine the mixture well and set aside.
  9. Arrange the pounded veal slices on a flat surface.
  10. Layer each piece of veal with 2 whole spinach leaves.
  11. Add a portion of the potato filling onto the spinach leaves.
  12. Starting at one of the long sides, roll the veal up in a jelly roll fashion.
