Description

This Greek appetizer features Eggplant about 3/4 lb.. The flavors come together beautifully. Ideal for parties, potlucks, or as a starter before the main course. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

Ingredients

  1. cut into 2" cubes 3 Medium carrots sliced 1/2" 8 Small red potatoes 3 Medium zucchini sliced 1" 1 Large red or green pepper - seeded and
  2. cut into 1" sq.
  3. Medium onions
  4. cut in wedges - separate wedges into 2-3 - layers each 16 Whole mushrooms Herb marinade (see - following recipe) Salt and pepper to taste
  5. Cook eggplant in 1" boiling water for 3 minutes and
  6. drain .
  7. Cook carrots in 1" boiling water until just tender crisp and drain.
  8. Cook unpeeled potatoes in 1" boiling water for approximately 15 - 20 minutes.
  9. Drain and cut in half.
  10. Place eggplant, carrots, potatoes, zucchini, peppers, onions and mushrooms in a large plastic bag.
  11. Add marinade, seal bag well.
  12. Refrigerate for 2 hours or overnight.
  13. Drain vegetables and reserve marinade.
  14. Using 8 metal skewers, thread vegetables, alternating varieties.
  15. Place on lightly greased grill, over low heat.
  16. Cook , turning often, basting with the reserved marinade for 10 - 15 minutes, or until vegetables are tender.
  17. Sprinkle lightly with salt before serving.
  18. Remaining marinade can be used again.
  19. It can be refrigerated for up to 2 weeks.
  20. This prevents the wood from burning
