Add the softened Kampyo to the Shiitake and liquid in the saucepan.

Bring to a boil, then cover and simmer for 5 minutes.

Stir in 1/4 cup soy sauce; simmer uncovered for 15 minutes longer, or until Kampyo is lightly colored, stirring occasionally.

Drain the mixture and cool slightly. Squeeze out liquid from the Shiitake mushrooms using paper towels.

Divide the Kampyo into 10 portions, each about 8-9 inches long.

Remove and discard Shiitake stems; cut the caps into 1/4-inch thick slices.

Wash rice until water runs clear; drain well. Combine rice and 5 cups water in a large saucepan.

Bring to a boil, then reduce heat to the lowest possible setting. Cover and simmer for 20-25 minutes, or until water is absorbed. Do not stir.
