  1. Garlic clove; minced 1 Egg; beaten 2 c Ricotta, low-fat 1/4 c Parmesan; grated 1 c Mozzarella; shredded * or substitute 1/2 t dried Oregano for 1/2 t of the dried Basil
  2. Cook noodles and broccoli separately according to their package directions;
  3. drain well.
  4. Set aside.
  5. For sauce, cut up canned tomatoes.
  6. In a large saucepan
  7. stir together undrained tomatoes, tomato sauce, celery, green or sweet red pepper, basil, bay leaves, and garlic.
  8. Bring to boiling; reduce heat.
  9. Simmer, uncover, 20-25 minutes or till sauce is thick, stirring occasionally.
  10. Remove bay leaves.
  11. Meanwhile, in a bowl
  12. stir together egg, ricotta cheese, parmesan cheese, and a quarter teaspoon of pepper.
  13. Stir in broccoli.
  14. Spread about half a cup of the sauce in a 13x9x2" baking dish.
  15. Top with half the noodles, half of the broccoli mixture, and half of the remaining sauce.
  16. Repeat layers, ending with the sauce.
  17. Bake, uncovered, in a 350 F (177&# 194;°C).
  18. oven for 25 minutes; sprinkle with Mozzarella.
  19. Bake five minutes more or till heated through.
  20. Let stand ten minutes before serving.
