Directions

  1. Preheat the oven to 400 degrees F (204°C).
  2. In a large saucepan, melt the butter over high heat and sauté the chopped onions and celery for 3 to 4 minutes, or until slightly wilted.
  3. Add the navy beans, salt, cayenne, water, and bay leaf to the saucepan and bring to a boil.
  4. Reduce heat to medium-low and cook until beans are tender and most of the water is absorbed, about 2 hours.
  5. In a large oven-proof skillet, combine flour and oil over medium-high heat.
  6. Stir constantly until a medium brown roux forms.
  7. Add the onions, celery, bell peppers, carrots, salt, and cayenne to the roux.
  8. Stir constantly and cook for 3 to 4 minutes, or until vegetables are slightly wilted.
  9. Lay the venison slices on top of the roux-vegetable mixture and cook for 2 minutes on each side.
  10. Add the sausage portions and cook for 2 to 3 minutes on each side.
  11. Pour in the chicken broth and stir the mixture until the roux and broth are combined and the mixture thickens.
  12. Scrape the bottom and sides of the pot to loosen any browned particles.
  13. Bring the mixture to a boil.
  14. Add the cooked beans to the skillet and reduce heat to medium-low; cook for 30 minutes.
  15. In a mixing bowl, combine the bread crumbs, Parmesan cheese, parsley, Essence of Emeril, and olive oil.
  16. Mix the topping ingredients well.
  17. Spoon the gratin topping evenly over the bean-meat mixture in the skillet.
  18. Bake for 10 minutes, or until the topping is lightly browned.
