Venison Au Vin
Description
This Venison Au Vin is a comforting, hearty main dish that transforms lean venison into a tender, flavorful meal through slow braising. The meat is first marinated in red wine vinegar and Worcestershire sauce to tenderize and infuse deep flavor. It is then seared with aromatic onions and garlic before being braised in a rich sauce made from cream of mushroom soup, claret wine, and bay leaves. The result is a succulent roast with a thick, savory gravy that pairs perfectly with mashed potatoes, crusty bread, or roasted root vegetables. Ideal for chilly evenings or special family dinners, this recipe brings restaurant-quality elegance to your home kitchen with minimal effort. The long cooking time ensures the meat falls apart effortlessly, making it a satisfying centerpiece for any table.Ingredients
Directions
-
In a large bowl, mix the red wine vinegar, 1 1/2 cups water, salt, and 1/2 teaspoon of the Worcestershire sauce.
-
Place the venison roast in the marinade, ensuring it is fully submerged. Cover and refrigerate overnight or for at least 8 hours.
-
Remove the venison from the marinade and pat dry with paper towels. Discard the used marinade.
-
Rub the venison with salt, cayenne pepper, and the remaining 1 teaspoon of Worcestershire sauce.
-
Preheat the oven to 325°F (165°C).
-
In a large oven-safe pan or Dutch oven, heat the olive oil over medium heat.
-
Add the minced garlic and chopped onions to the pan. Sauté until the onions are soft and clear, about 5 minutes.
-
Place the seasoned venison into the pan on top of the onions and garlic.
-
Pour the two cans of cream of mushroom soup evenly over the venison.
-
Cover the pan tightly with a lid or aluminum foil and place in the preheated oven.
-
Roast for 30 minutes.
-
Remove the pan from the oven, add the claret wine and bay leaves, and cover again.
-
Return to the oven and cook for an additional 2 hours, basting the meat with the pan juices every 20-30 minutes.
-
Check for doneness; the meat should be tender and easily pierced with a fork. Serve hot with the gravy.
