Ingredients

Directions

  1. Place the gelatin in a blender and add 2 tablespoons of water.
  2. Heat the remaining water to a boil and carefully pour it into the blender with the gelatin.
  3. Blend the mixture until the gelatin is completely dissolved and well mixed.
  4. Add the ice cubes, sugar-free banana pudding mix, and ricotta cheese to the blender.
  5. Blend on high until the mixture is smooth, creamy, and fully combined.
  6. In a small bowl, mix together the sugar and ground cinnamon.
  7. Slice the bananas. Place a single layer of banana slices into the bottom of the chocolate pie crust.
  8. Sprinkle half of the cinnamon-sugar mixture over the banana layer.
  9. Pour half of the pudding mixture into the pie crust, covering the bananas.
  10. Repeat the layering process with the remaining banana slices and the remaining cinnamon-sugar mixture.
  11. Pour the remaining pudding mixture over the top layer, smoothing the surface.
  12. Refrigerate the pie for at least 2 hours, or until the filling is firmly set.
  13. Just before serving, dip banana slices in melted chocolate and arrange on top of the pie.
  14. Garnish with fresh mint leaves.
