  1. Soak the dried bean thread noodles and tree-ear mushrooms in warm water until soft and pliable, about 15-20 minutes.
  2. Drain the noodles and cut them into shorter lengths; set aside.
  3. Remove the hard centers from the soaked mushrooms, coarsely chop them, and set aside.
  4. In a medium bowl, combine the ground pork, minced garlic, fish sauce, and fresh ground pepper.
  5. Mix in the flaked crab meat, chopped mushrooms, grated carrot, bean sprouts, minced shallots, and prepared bean thread noodles until well combined.
  6. In a small bowl, combine warm water and sugar to create a adhesive glaze.
  7. Lay one rice paper wrapper on a damp towel to keep it from drying out.
  8. Generously brush the rice paper with the sugar water mixture and let it sit for about 30 seconds until it becomes soft and pliable.
  9. Take about 3 tablespoons of the filling and shape it into a tight, compact cylinder approximately 1 inch wide by 4-5 inches long.
  10. Place the filling cylinder along the lower edge of the softened rice paper wrapper.
  11. Roll the bottom edge of the wrapper up and over the filling tightly.
  12. Fold both side edges inward to enclose the ends of the filling.
  13. Continue rolling the wrapper up into a tight cylinder.
  14. Place the completed roll on a plate and cover with plastic wrap to prevent drying; repeat with remaining wrappers and filling.
  15. Heat peanut oil in a wok or deep saucepan to a depth of 2 inches over medium heat until it reaches 325&# 194;°F (165°C).
  16. Carefully add a few spring rolls to the oil, ensuring not to crowd the pan.
  17. Fry for 10 seconds, then immediately increase the heat to high so the oil reaches 375°F (190°C).
  18. Fry, turning occasionally, until the rolls are golden brown and crispy, about 6 to 8 minutes.
  19. Remove the rolls from the oil and drain on paper towels.
  20. Once cooled slightly, cut the rolls crosswise into 1.5-inch pieces.
  21. Arrange the rolls on a serving plate lined with lettuce leaves and serve with fresh mint, coriander, and nuoc cham dipping sauce.
