  1. Grind cumin seeds, dried red chilies, peppercorns, cardamom seeds, cinnamon, black mustard seeds, and fenugreek seeds in a spice grinder until finely powdered.
  2. Place the ground spice mixture in a bowl.

  4. Stir to combine into a smooth paste and set aside.
  5. Heat vegetable oil in a wide, heavy-bottomed pot over medium heat.
