  1. Grind pitted dates in a food processor or meat grinder until they form a fine, sticky paste.
  2. In a large bowl, combine the ground dates, 2/3 cup chopped walnuts, chopped candied cherries, and chopped candied ginger.
  3. Knead the mixture with your hands until thoroughly blended and cohesive.
  4. Form the mixture into a log approximately 2 inches thick and 9 inches long on a work surface sprinkled with sugar.
  5. Wrap the log tightly in waxed paper or plastic wrap and refrigerate for at least 1 hour to firm up.
